Tony's Italitastic Lasagna

Ingredients:

Lasagna noodles

Large jar spaghetti sauce

1 lb. extra firm tofu

Italian dressing

2 tablespoons Veganaise

1 teaspoon garlic powder

1 teaspoon onion powder

Salt & pepper to taste

1 package spinach

1 green, red, or yellow pepper

½ pound mushrooms

Any other veggies- zucchini, eggplant, carrots, tomatoes, or anything else (optional)

Preheat oven to 375. Mix together tofu, dressing, Veganaise, & spices. Sauté peppers, mushrooms, and other veggies. Stir in spinach. Line baking dish with a thin layer of red sauce and lay one layer of cooked noodles. Spoon on spinach, mushrooms, peppers and any other veggies and another layer of sauce. Add another layer of noodles. Spread tofu mixture then last layer of noodles. Top with more sauce, and a sprinkle of yeast flakes, and Vegan parmesan. Bake for 30-45 minutes.
