Mimi's Mashed Potatoes

Wash and cut four large potatoes into quarters. Skin may be left on or removed. Boil in salted water for 30 to 45 minutes. Drain and mash.

Add:

3-4 tbs. of vegan margarine (Blue Bonnet light or Earth Balance) or 3-4 tablespoons Veganaise

1 can vegetable broth or 2 cups soymilk

1 tablespoon lemon juice (optional, but it’s good)

1teaspoon garlic powder

1 teaspoon onion powder

2 tablespoons parsley or chives

1 teaspoon salt
