Tommy's Tofu Salad

Ingredients:
1 lb. extra firm tofu

3 carrots

3 celery stalks

4 dill pickles

½ tablespoon garlic powder

½ tablespoon onion powder

1 tablespoon yeast flakes

½ teaspoon paprika (optional)

1 tablespoon dill

1 tablespoon sugar

2 tablespoons lemon juice

2 tablespoons Veganaise

1 tablespoon mustard

1 tablespoon soy sauce

In large bowl, combine all ingredients except, tofu, carrots, celery, & pickles. Crumble tofu into mixture. Pour in a splash or two of pickle juice. It adds an extra tang! If you have a food processor or blender, finely chop carrots, celery, and pickles. Otherwise, do it by hand. Mix everything together, and CHILL BABY!!
Serve on a bed of lettuce, in a sandwich, in a tortilla roll-up, on melba toast or rye crackers…whatever!
